Dual classing was really mostly useful to give more hit points to your Wizard.

It's extremely overpowered, considering you get 9 levels of fighter dice roll hit points and then you swap over to a pure caster with single class xp gain, but you still have 9 levels of fighter hp. After 9 levels, then you get all the Fighter shit back which lets you battle in melee as well as any Fighter, but you're also a single-class caster who levels as a single-class caster with all of the benefits of Arcane magic.

The ultimate Gish class. Takes a bit of time to set up, but it's far, far better than a Bard or whatever goyslop 5e came up with for Gishing.

There's nothing wrong with Fighter/Mage multiclass, or Fighter/Mage/Thief multiclass, but they just aren't as optimal.

Dual class Fighter to Mage is, without question, the strongest class combination in the original baldur's gate games. I haven't tested every 2E-derived DnD game, but I suspect it's the same for them too. 9 levels of fighter hp rolls + fighter thaco and apr + the ability to slap on heavy armor IF you want, plus holding a shield and fighter weapon ethos training... Bruh it's too good. I don't know if every version of F->M allows you to equip a helmet, but you can in BG and that's also huge. Crit immunity on a mage.

I can't remember if Shattered Lands has dual classes. It probably does, but the xp in that game is so plentiful that multi-classes become very advantageous. If you run single-class then you're adding work. Plus the early game is so hard you'll probably want the extra utility from additional classes.

Man, I forgot how hold editions would cap hit dice at (usually) level 9. After that you just get +1s or maybe even +2s. That makes dual classed Fighters even better.

I'm pretty sure there are way too many gish options in 5e. Even non-spellcaster classes tend to get magic subclasses more often than non-magic ones. Fuck, even new playable race options usually come with spells nowadays.

Also yeah, part of why I think 5e is shit is because of giving spells to every class and trying to add all these dumb half-assed gish options. 3.5 already has too many casters with all the multiclass shenanigans.
